Beef (or Venison) Stroganoff

 

3 lb venison steak 
1 tablespoons paprika
shortening 
1 teaspoon salt
1 large onion, chopped 
1 cup sour cream
1/2 cup water 
1/2 cup dry red wine (optional)
1 to 2 cans condensed cream of mushroom soup                 
1 - 3 oz. can mushrooms
 
Cut meat into bite-sized pieces or into strips.  Brown meat and onion in shortening; add water; cover and simmer 30 minutes.  Add additional water during cooking if needed.  Add soup, mushrooms, paprika, salt and pepper.  Simmer 1 hour.  Add sour cream and cook until heated.  If venison tastes gamey, add wine.  Serve over rice or noodles.  This recipe can be doubled.  Freeze before adding sour cream.
