Blackberry Cobbler

 

1 cup flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt cup milk
1/2 cup (1 stick) butter, melted
2 1/2 cups blackberries, fresh or frozen (no need to stew)
 
Heat oven to 350
 
Whisk together flour, sugar, baking powder and salt, set aside.  In the microwave melt butter in 11x7 inch baking dish; pour all but about 1 Tablespoon
of the melted butter into the flour mixture along with the milk.  Whisk together just until mixed well.  Spread blackberries in the bottom of the baking dish; and then pour batter over top.  Bake 45 minutes until nice and golden brown and berries are bubbling.  Serve warm with vanilla ice cream.
 
Note:  If you use self-rising flour, omit the baking powder and salt.  You may use other kinds of berries also.
