Blueberry
Pudding
1 cup
sugar
1 cup milk or
cream
t tablespoon
butter
2 cups fresh
blueberries
1
egg
1 Tablespoon
sugar
2 cups
flour
1 Tablespoon
flour
2 teaspoons baking
powder
Mix on mixing bowl, cream
1 cup sugar, butter and egg
Sift in 2 cups flour and
baking powder together
Stir the dry ingredients
into the egg
mixture alternately
Wash blueberries. Sprinkle with sugar and
flour. Stir to coat berries. Fold berries into
the batter.
Pour into a greased and
floured 8-inch pan
Bake in preheated oven at
375 degrees for 40-45 minutes or until a toothpicks
inserted in the center comes out
clean.
Cut into nine
squares. Serve warm coffeecake in a bowl with fresh
milk or cream poured over, then sugar sprinkled on
top.
