Plaintain Skices - Dominican
Republic
3 Green plaintains, cut
into 1/2 inch slices
Cover with
water
1 1/2 Tbs.
salt
1 1/2 Cup cooking
oil
Peel plaintains and cut
into 1/2 inch slices
Boil in water with salt
for 1/2 hour
Drain well. Heat oil
and add plaintains (350)
When plaintains are soft,
remove and mash between two pieces of paper towel.
Then shape with fingers and smooth
edges.
Add again to hot oil and fry until slightly
golden.
Remove, drain and sprinkle
with salt. This is not the crisp
type.
