Lemon Bars
1 cup margarine
2 cups flour
2 cups powdered sugar
Mix and spread out the stiff batter
in a jelly roll pan.
Bake 15 minutes at 350 degrees until
pale tan or paler. Cool
Mix:
4 teaspoons lemon
juice
Rind of 2 lemons grated, 4 eggs, well
beaten, 2 cups sugar, 1 tsp. baking
powder
4 Tbsp. flour. - 1 cup shredded
coconut (optional) Pour over crust and
bake
at 350 degrees for 25
minutes.
