Migas
1 heaping cup broken
tortilla chips
1/2 cup Cheddar Cheese,
grated
1/2 cup Monterrey Jack
Cheese, grated
3
eggs
2-3 green onions,
chopped (Wash Well)
2-3 strips of Red Pepper.
chopped
2 small tomatoes
chopped
Also;
Paprika, parsley or
cilantro
Picante
Sauce
Plain Yogurt or Sour
Cream
In a large bowl, mix
chips, cheeses and eggs. Let stand until chips
soften, at least 10 minutes
In a non-stick skillet,
sauce onions, pepper and tomato util
crisp.
Stir in egg mixture.
Scramble until eggs are just done --"solid bu
soft"
Place in a serving
bowl. Garnish bowl. Garnish with paprika,
parsley or cilantro. Serve with picanta' sauce and
yogurt or sour cream.
Makes 4-6
servings
It is great with coffee muffins or
just coffeecake.
